Tofu Pasta Plus Sauce
Tofu plus any veggie for a quick sauce with flavor and protein
Ingredients
- 4 cups spinach OR any veggie, broccoli, tomatoes, kale?
- 16 oz silken tofu 1 block
- 3 tbsp lemon juice
- 2 tbsp nutritional yeast
- salt
- pepper
- 1 clove garlic
Optional
- cashews
- olive oil
- onions
Instructions
- Cook washed spinach for a minute or two in pan until wilted, add water if needed.
- Add all ingredients to blender and blend until smooth.
- Serve over pasta or veggies or whatever..
Optional
- Add cashews or walnuts
- Saute garlic and/or onions with spinach
- Combine veggies
