Roast Chicken with Garlic and Rosemary

Ingredients
  

  • 1 whole chicken
  • 3 tbsp olive oil
  • 1 tsp red pepper flakes
  • 4 cloves garlic chopped
  • 3 sprigs rosemary
  • 1 lemon
  • salt
  • pepper

Instructions
 

  • Prep chicken, rinse, throw out giblets and neck.
  • Rub olive oil on outside, using hands rub most of garlic on next, then sprinkle with red pepper, salt and pepper.
  • Place rosemary, lemon halves and rest of garlic in cavity.
  • If you have string could tie up legs a bit. Place in roasting pan and cook until thermometer pops or thigh hits 180 degrees with meat thermometer, 2 to 3 hours.
