Roast Chicken with Garlic and Rosemary
Ingredients
- 1 whole chicken
- 3 tbsp olive oil
- 1 tsp red pepper flakes
- 4 cloves garlic chopped
- 3 sprigs rosemary
- 1 lemon
- salt
- pepper
Instructions
- Prep chicken, rinse, throw out giblets and neck.
- Rub olive oil on outside, using hands rub most of garlic on next, then sprinkle with red pepper, salt and pepper.
- Place rosemary, lemon halves and rest of garlic in cavity.
- If you have string could tie up legs a bit. Place in roasting pan and cook until thermometer pops or thigh hits 180 degrees with meat thermometer, 2 to 3 hours.
