Original recipe is vegan so added some real chocolate, might try with some butter and an egg. They stay together pretty well and are delicious. Much better way to use up bananas. Can add nuts, replace coconut with butter if needed.
Banana Date Muffin Tops
Ingredients
- 1 bananas
- 1/4 cup medjool dates
- 1/8 cup coconut oil or sub butter?
- 1/2 tsp vanilla
- 1/5 tsp cinnamon
- 1/5 tsp baking powder
- 1 cups rolled oats
- kosher or sea salt
Optional
- 1/8 cup dark chocolate
Instructions
- Preheat oven to 350.
- Chop dates. Add bananas, dates, coconut oil , vanilla, cinnamon, salt, process until it's smoothish.
- Sprinkle baking powder over top and process in.
- Add in most of the oats until just mixed, fold in the remaining oats and the chocolate.
- Place parchment on pan, drop in mounds, makes about 8
- Bake for 15 minutes.
Notes
Vegan if no chocolate. Try adding an egg if not vegan?
