So easy, great way to make a quick lunch that works for days. Top with spices, croutons, sliced radishes, pepitos, toasted pecans!

Ingredients
  

  • 1 apple
  • 1/2 butternut squash
  • 1 onion
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions
 

  • Preheat oven to 400.
  • Cut squash, onion, and apple into large, similar size chunks. Place in a large bowl.
  • Sprinkle olive oil over veggies and mix well, add some salt.
  • Place in oven and roast until browned slightly.
  • When slightly cooled puree with chicken broth to create a smooth, thick soup.
  • Optional – take a piece of bread and brush with oil, salt, herbs, then toast it for a big crouton.
