Instructions
Preheat oven to 400.
Cut squash, onion, and apple into large, similar size chunks. Place in a large bowl.
Sprinkle olive oil over veggies and mix well, add some salt.
Place in oven and roast until browned slightly.
When slightly cooled puree with chicken broth to create a smooth, thick soup.
Optional - take a piece of bread and brush with oil, salt, herbs, then toast it for a big crouton.
