Butternut Squash Soup
Ingredients
- 1 apple
- 1/2 butternut squash
- 1 onion
- 2 tbsp olive oil
- salt
- pepper
Instructions
- Preheat oven to 400.
- Cut squash, onion, and apple into large, similar size chunks. Place in a large bowl.
- Sprinkle olive oil over veggies and mix well, add some salt.
- Place in oven and roast until browned slightly.
- When slightly cooled puree with chicken broth to create a smooth, thick soup.
- Optional – take a piece of bread and brush with oil, salt, herbs, then toast it for a big crouton.
