Sweet Potato Brownies

Ingredients
  

Mix these Together

  • 3/4 cup sweet potato roasted or boiled and mashed
  • 1/4 cup maple syrup
  • 3 tbsp almond butter or peanut butter
  • .75 tbsp vanilla
  • .5 tsp apple cider vinegar

Separately Mix These

  • 1/8 tsp salt
  • 1/2 cup cocoa powder
  • 1/2 cup flour any kind
  • .75 tsp baking powder
  • 1/8 tsp baking soda

Optional (ups sat fat)

  • 2 squares dark chocolate bar or any chocolate chips etc.
  • 1.5 tbsp canola oil sub in for peanut butter

Instructions
 

  • Prep sweet potatoes by roasting at 425 for an hour. Might be able to boil but then more water so maybe more dry ingredients? Or maybe an egg.
  • Use small square baking pan, spray or parchment.
  • Oven preset 350
  • Mix dry into wet, add layer of chips in middle and/or on top
  • Bake for 20 to 30 minutes. Cool and keep in fridge to help harden.
